Slow Cooker Birria Meatballs

These Slow Cooker Birria Meatballs are out of this world delicious!!
Get a headstart with frozen meatballs and slow cook them in a flavorful sauce of birria seasoning, chipotle in adobo, onion, garlic and tomato sauce.
These are delicious over a bowl of steaming rice and topped with red onion, cilantro and jalapenos.

How To Make Slow Cooker Birria Meatballs

Ingredients
- 48 ounces frozen meatballs
- 1 small onion, chopped
- 3 cloves of garlic, minced
- 1 (1 ounce) envelope birria seasoning packet
- 1 cup beef stock
- ¼ cup tomato paste
- 2 tablespoons liquid from chipotle in adobo
- Red onion, cilantro, lime, jalapenos for topping

Step-by-Step Guide
1. To your slow cooker add the meatballs and onion.
2. In a small bowl whisk together the garlic, birria seasoning, beef stock, tomato paste and liquid from the chipotle in adobo.
3. Stir to combine.

4. Cover and cook on low for 6 hours or high for 4 hours.
5. Garnish with red onion, cilantro, lime and jalapenos.

6. Serve!

Tips and Tricks
- Store leftovers in an airtight container in refrigerator for up to 3 days.
- You can use homemade meatballs just make sure to brown them a bit first.
- This is a great appetizer or perfect dinner over rice.
