Slow Cooker Birria Meatballs

Ingredients

  • 48 ounces frozen meatballs
  • 1 small onion chopped
  • 3 cloves of garlic minced
  • 1 (1 ounce) envelope birria seasoning packet
  • 1 cup beef stock
  • ¼ cup tomato paste
  • 2 tablespoons liquid from chipotle in adobo
  • Red onion cilantro, lime, jalapenos for topping

Instructions

  • To your slow cooker add the meatballs and onion.
  • In a small bowl whisk together the garlic, birria seasoning, beef stock, tomato paste and liquid from the chipotle in adobo.
  • Stir to combine.
  • Cover and cook on low for 6 hours or high for 4 hours.
  • Garnish with red onion, cilantro, lime and jalapenos.
  • Serve!
