Slow Cooker Bourbon Chicken

How To Make Slow Cooker Bourbon Chicken

Ingredients
- 3 pounds boneless skinless chicken thighs
- ¼ cup sliced green onions, plus more for garnish
- 1/4 teaspoon powdered ginger
- 4 cloves garlic, minced
- ½ teaspoon red pepper flakes
- â…“ cup apple juice
- 1 ½ tablespoons honey
- ¼ cup brown sugar
- ¼ cup ketchup
- 3 tablespoons apple cider vinegar
- ¼ cup bourbon (optional)
- ¼ cup soy sauce
- 3 tablespoons cornstarch
- 3 tablespoons water or more apple juice

Step-by-Step Guide
1. To the bottom of your slow cooker add your chicken and scallions.

2. In a mixing bowl whisk together the powdered ginger, garlic, red pepper flakes, apple juice, honey, brown sugar, ketchup, apple cider vinegar, bourbon and soy sauce.
3. Pour the sauce over the chicken cover and cook on low for 6 hours and high for 4 hours.

4. Once the chicken is cooked through and tender, lightly shred.
5. Whisk together the cornstarch and water and stir into the slow cooker to thicken the sauce.


Tips and Tricks
- Store leftovers in an airtight container in refrigerator for up to 3 days.
- You can use any cut of chicken you like. Thighs really make this dish authentic and they cook up so perfectly.
- You can totally skip the bourbon and substitute more apple juice.
