Slow Cooker Bourbon Chicken

Ingredients

  • 3 pounds boneless skinless chicken thighs
  • ¼ cup sliced green onions plus more for garnish
  • 1/4 teaspoon powdered ginger
  • 4 cloves garlic minced
  • ½ teaspoon red pepper flakes
  • cup apple juice
  • 1 ½ tablespoons honey
  • ¼ cup brown sugar
  • ¼ cup ketchup
  • 3 tablespoons apple cider vinegar
  • ¼ cup bourbon optional
  • ¼ cup soy sauce
  • 3 tablespoons cornstarch
  • 3 tablespoons water or more apple juice

Instructions

  • To the bottom of your slow cooker add your chicken and scallions.
  • In a mixing bowl whisk together the powdered ginger, garlic, red pepper flakes, apple juice, honey, brown sugar, ketchup, apple cider vinegar, bourbon and soy sauce.
  • Pour the sauce over the chicken cover and cook on low for 6 hours and high for 4 hours.
  • Once the chicken is cooked through and tender, lightly shred.
  • Whisk together the cornstarch and water and stir into the slow cooker to thicken the sauce.
