To the bottom of your slow cooker add your chicken and scallions.
In a mixing bowl whisk together the powdered ginger, garlic, red pepper flakes, apple juice, honey, brown sugar, ketchup, apple cider vinegar, bourbon and soy sauce.
Pour the sauce over the chicken cover and cook on low for 6 hours and high for 4 hours.
Once the chicken is cooked through and tender, lightly shred.
Whisk together the cornstarch and water and stir into the slow cooker to thicken the sauce.
