Ingredients

  • 3 pounds boneless skinless chicken thighs
  • ¼ cup sliced green onions plus more for garnish
  • ¼ teaspoon powdered ginger
  • 4 cloves garlic minced
  • ½ teaspoon red pepper flakes
  • cup apple juice
  • 1 ½ tablespoons honey
  • ¼ cup brown sugar
  • ¼ cup ketchup
  • 3 tablespoons apple cider vinegar
  • ¼ cup bourbon optional
  • ¼ cup soy sauce
  • 3 tablespoons cornstarch
  • 3 tablespoons water or more apple juice

Instructions

  • Step 1: Add the Chicken - Place the chicken thighs directly into the bottom of your slow cooker. Scatter the sliced green onions over the top. No need to cut the chicken beforehand. It will shred easily later once it is cooked.
  • Step 2: Make the Sauce - In a mixing bowl whisk together the powdered ginger, minced garlic, red pepper flakes, apple juice, honey, brown sugar, ketchup, apple cider vinegar, bourbon if using, and soy sauce. Take a second to smell it. That is the magic starting already.
  • Step 3: Pour and Cook - Pour the sauce evenly over the chicken. Place the lid on the slow cooker and cook on low for 6 hours or high for 4 hours. Try not to lift the lid too often. Let the slow cooker do its thing.
  • Step 4: Shred the Chicken - Once the chicken is fully cooked and tender, use two forks to lightly shred it right in the slow cooker. The chicken should fall apart easily and soak up even more of that sauce.
  • Step 5: Thicken the Sauce - In a small bowl whisk together the cornstarch and water or apple juice until smooth. Stir it into the slow cooker. Cover and cook for an additional 15 to 20 minutes until the sauce thickens and coats the chicken beautifully.
