How To Make Slow Cooker Jerk Chicken

Ingredients
- Small onion, sliced
- Small jalapeno, sliced
- 8 bone in chicken thighs
- 2 tablespoons jerk seasoning
- 3 cloves garlic, minced
- 4 scallions, chopped (plus more for garnish)
- ¼ cup brown sugar
- ¼ cup pineapple juice
- ¼ cup soy sauce
- ¼ cup ketchup Lime slices, jalapenos and scallions for topping

Step-by-Step Guide
1. In the bottom of your slow cooker add your onion and jalapenos.
2. Season the chicken both sides with the jerk seasoning.
3. In a large skillet over medium high heat place the thighs skin side down and cook for 3-5 minutes until just browned.
4. Place the chicken skin side up in the slow cooker.
5. In a small bowl mix together the garlic, brown sugar, pineapple juice, soy sauce and ketchup.
6. Sprinkle with the scallions.
7. Cover and cook on low for 6 hours or high for 4 hours.
8. Serve over rice!

Tips and Tricks
- Store leftovers in an airtight container in refrigerator for up to 3 days.
- You can a bit of red pepper flake for more kick.
- You can use any cut of chicken you like. I prefer skin on bone in but this recipe will also work with boneless skinless.
