How to Make a Southwest Chicken Salad Bowl

Ingredients:
- 1 grilled chicken breast (about 4-6 oz), seasoned with taco spices and sliced
- 2 cups romaine lettuce, chopped
- 1/3 cup black beans, rinsed and drained
- 1/3 cup corn (fresh, frozen, or canned)
- 1/3 cup cherry tomatoes, halved
- 1/3 bell pepper, diced
- 1/3 cup shredded cheddar cheese
- 1 cup tortilla strips
Dressing:
- 3 heaping tablespoons mayonnaise
- 1 tablespoon lime juice
- 1 tablespoon olive oil
- 1/4 teaspoon cumin
- 1/4 teaspoon chilli powder
- 1/4 teaspoon garlic powder
- 1 tsp. Salt
- 1/4 tsp. Pepper
Step-by-Step Guide
Grill the chicken breast with taco seasoning until fully cooked, then slice it.
In a large bowl, combine the chopped romaine lettuce, bell pepper, cherry tomatoes, black beans, cheddar cheese, corn, and tortilla strips.
Place the sliced chicken on top of the salad.

In a small bowl, whisk together mayonnaise, lime juice, olive oil, cumin, chilli powder, garlic powder, salt, and pepper until well combined.
Drizzle the dressing over the salad, or serve it on the side.
