Southwest Chicken Salad Bowl

A bowl with grilled chicken, avocado slices, corn, cherry tomatoes, shredded cheese, tortilla strips, and black beans, being drizzled with creamy dressing from a spoon.

Ingredients

  • 1 Grilled chicken breast (about 4-6 oz), seasoned with taco spices and sliced
  • 2 cups Romaine lettuce chopped
  • 1/3 cup Black beans rinsed and drained
  • 1/3 cup Corn (fresh, frozen, or canned)
  • 1/3 cup Cherry tomatoes halved
  • 1/3 Bell pepper diced
  • 1/3 cup Shredded cheddar cheese
  • 1 cup Tortilla strips

Dressing

  • 3 heaping tbsp's Mayonnaise
  • 1 tbsp Lime juice
  • 1 tbsp Olive oil
  • 1/4 tsp Cumin
  • 1/4 tsp Chilli powder
  • 1/4 tsp Garlic powder
  • 1 tsp Salt
  • 1/4 tsp Pepper

Instructions

  • Grill the chicken breast with taco seasoning until fully cooked, then slice it.
  • In a large bowl, combine the chopped romaine lettuce, bell pepper, cherry tomatoes, black beans, cheddar cheese, corn, and tortilla strips.
  • Place the sliced chicken on top of the salad.
  • In a small bowl, whisk together mayonnaise, lime juice, olive oil, cumin, chilli powder, garlic powder, salt, and pepper until well combined.
  • Drizzle the dressing over the salad, or serve it on the side.
