In a medium sized bowl add the pork chops, 1 tbsp of oil, garlic salt, onion powder, pepper and thyme. Stir until completely coated.
In a large pan add the remaining oil and turn the heat to medium high. Once the pan is hot, cook the pork chops until golden brown and cooked all the way through, around 3-5 minutes. (depending on how thick the pork chops are)
Once the pork chops are completely cooked, set aside. Add the apple cider, brown sugar, butter and Dijon mustard and stir with a whisk to get all the bits from the bottom of the pan. Cook on a medium heat until it thickens up.
Serve the pork chops over mashed potatoes and drizzle the glaze all over top. Enjoy! You can top with fresh parsley if you’d like. (Optional)
Notes
Store in an airtight container in the fridge for 2-3 days.
Dry the pork chops before seasoning!
If the glaze does not thicken you can always add 1 tbsp of cornstarch and 1 tbsp of water to a cup and stir, then add that to the glaze and stir to thicken.
