Crockpot Sweet and Sour Meatballs

Crockpot Sweet and Sour Meatballs bring tender meatballs, juicy pineapple, and a glossy sweet and tangy sauce together in one wonderfully simple slow cooker dish. With just a few minutes of prep, they are an easy choice for busy family dinners, parties, game days, and potlucks.

Ingredients

  • 32 oz frozen meatballs
  • ½ cup brown sugar
  • ¼ cup ketchup
  • 2 tbsp soy sauce
  • 2 tbsp cornstarch
  • 1 20 oz can pineapple chunks (juice separated and reserved)

Instructions

  • Step 1: Build the Sweet and Sour Sauce - Pour the brown sugar, ketchup, soy sauce, cornstarch, and reserved pineapple juice into your crockpot. Stir everything together until the cornstarch is worked into the liquid and you do not see dry pockets floating around. This first stir matters because cornstarch thickens best when it is evenly distributed. At this stage the sauce will look fairly thin, and that is exactly what you want. As the slow cooker heats up, the cornstarch begins doing its job and the sauce gradually turns glossy and thick enough to coat the meatballs.
  • Step 2: Add the Meatballs and Pineapple - Pour the frozen meatballs into the sauce, then add the pineapple chunks. Use a large spoon to gently toss everything together until the meatballs are coated and the pineapple is spread throughout the crockpot. You do not need to be aggressive here. A gentle stir is enough to get sauce around everything while keeping the pineapple pieces intact. I usually take an extra few seconds to scrape sauce from the bottom and spoon it over the top so every meatball starts cooking in the same sweet and savory mixture.
  • Step 3: Cook Until Hot and Tender - Cover the crockpot and cook the meatballs on high for 2 hours. About halfway through cooking, lift the lid and give everything a careful stir. That halfway stir helps move the meatballs around so the ones near the edges do not spend the entire cooking time sitting against the hottest part of the crockpot. It also gives the sauce another chance to coat everything evenly. Put the lid back on right away so you do not lose too much heat, then let the slow cooker finish the job.
  • Step 4: Stir and Serve - Once the two hours are up, give the meatballs one final stir. By now the sauce should look thicker and shinier, and the meatballs should be hot all the way through. Spoon them into a serving bowl or simply leave them in the crockpot on the warm setting if you are serving a crowd. I like to make sure there are pineapple chunks scattered across the top because they make the whole thing look inviting before anyone has even taken the first bite. The original directions use this same simple method of mixing the sauce, adding the meatballs and pineapple, cooking for two hours on high, and stirring before serving.

Notes

Substitutions

  • Turkey meatballs: Frozen turkey meatballs are an easy swap if that is what your family usually buys.
  • Chicken meatballs: Chicken meatballs work well with the pineapple and give the dish a slightly lighter feel.
  • Tamari: Use tamari in place of soy sauce if you need an alternative that fits your dietary needs.
  • Pineapple tidbits: Smaller pineapple pieces work just as well and give you a little pineapple in more bites.
  • Dark brown sugar: Dark brown sugar can replace light brown sugar and gives the sauce a slightly deeper molasses flavor.

Variations

  • Add bell peppers: Stir in chopped red or green bell peppers for extra color and a tender crisp bite.
  • Add onion: Sliced sweet onion cooks down nicely in the sauce and adds another savory layer.
  • Give it a little heat: Add a small spoonful of chili garlic sauce or a pinch of red pepper flakes if your family enjoys some spice.
  • Make it a rice bowl: Serve the meatballs over fluffy white rice and spoon plenty of the pineapple sauce over everything.
  • Turn it into dinner with vegetables: Add steamed broccoli or green beans on the side to make the plate feel more complete.
  • Serve it sandwich style: Tuck a few meatballs into a soft roll for a sweet and savory sandwich that is especially good for casual family nights.

Tips and Tricks

  • Save every drop of pineapple juice: That juice is part of the sauce, so drain the pineapple over a bowl rather than pouring it into the sink.
  • Mix the cornstarch well: Stir until you do not see any obvious clumps before adding the meatballs.
  • Keep the lid closed: Every time you lift the crockpot lid, heat escapes and the cooking process slows down.
  • Remember the halfway stir: Moving the meatballs around helps them heat evenly and gives the sauce a smoother consistency.
  • Use a large slow cooker for easy stirring: Leaving a little room at the top makes it much easier to toss everything together without sending a meatball onto the floor.
  • Switch to warm for parties: Once the meatballs are fully heated, the warm setting helps keep them ready for guests without continuing to cook them aggressively.
  • Serve with plenty of sauce: The sauce is one of the best parts, so make sure you scoop some over each serving instead of leaving it behind in the crockpot.

Serving Ideas

  • Steamed white rice: The rice absorbs the sweet and savory sauce and turns the meatballs into a satisfying family dinner.
  • Brown rice: Brown rice adds a slightly nutty taste and makes the meal feel a little heartier.
  • Egg noodles: Soft noodles are great for catching the sauce and make the dish especially comforting.
  • Steamed broccoli: Broccoli gives you something fresh and green alongside the rich meatballs.
  • Green beans: Simple green beans add crunch and help balance the sweetness of the sauce.
  • Party toothpicks: For appetizers, keep things simple and let guests grab individual meatballs straight from the serving dish.
  • Fresh sliced green onions: A small sprinkle over the top adds color and a mild onion bite right before serving.

Storage and Make Ahead Tips

  • Refrigerate leftovers promptly: Transfer cooled meatballs and sauce to a covered container and keep them in the refrigerator.
  • Store the sauce with the meatballs: Keeping everything together helps the meatballs stay moist and gives the flavors more time to mingle.
  • Reheat gently: Warm leftovers in the microwave or on the stove until they are heated through, stirring occasionally so the sauce coats everything evenly.
  • Prep the sauce early: You can measure the sauce ingredients ahead of time so all you need to do later is combine everything in the slow cooker.
  • Keep frozen meatballs on hand: A bag in the freezer turns this into one of those reliable recipes you can make when the day gets away from you.
  • Use the warm setting for serving: Once the meatballs are fully cooked and hot, the warm setting is handy when dinner times are staggered or guests are arriving over a longer stretch.
