French Onion Chicken Bake

French Onion Chicken Bake turns the cozy flavors of French onion soup into a hearty family dinner with tender chicken, creamy onion sauce, melted provolone, buttery garlic croutons, and crispy fried onions. It is a comforting oven dinner that works just as well with mashed potatoes on a busy weeknight as it does with a full spread for Sunday supper.

French Onion Chicken Bake with melted cheese and caramelized onions on mashed potatoes
Prep Time:15 minutes
Cook Time:45 minutes
Total Time:1 hour

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 (10.5-ounce) can condensed French onion soup
  • ¾ cup French onion dip
  • 1 tablespoon Worcestershire sauce
  • 8 slices provolone cheese
  • 2 cups garlic croutons
  • 2 tablespoons unsalted butter melted
  • 1 cup crispy fried onions
  • 2 tablespoons chopped fresh parsley

Instructions

  • Step 1: Prepare the Baking Dish - Preheat your oven to 375°F and lightly grease a 9 by 13 inch baking dish. You do not need a heavy coating of grease because there will be plenty of sauce in the pan, but a light layer makes cleanup easier later. I like getting the oven heated before I start assembling everything because the rest of the recipe comes together quickly.
  • Step 2: Build the French Onion Sauce - Pour the condensed French onion soup into the bottom of the baking dish, then stir in the Worcestershire sauce. Spread the mixture across the bottom so the chicken will have sauce underneath it as it bakes. That little bit of Worcestershire may not look like much, but it gives the onion sauce a deeper, more savory taste.
  • Step 3: Arrange and Season the Chicken - Place the chicken breasts on top of the sauce in a single layer. Sprinkle them evenly with the kosher salt, black pepper, and garlic powder. Try to get some seasoning across every piece instead of concentrating it in one spot. If your chicken breasts are extremely thick, you can gently pound the thickest portion so they cook more evenly.
  • Step 4: Add the Creamy Onion Layer - Divide the French onion dip among the four chicken breasts and spread it across the top of each piece. You do not have to make this layer beautiful. Just give each chicken breast a good coating. As it heats, the dip softens into the soup underneath and creates that thick, creamy sauce that makes this dinner so satisfying over mashed potatoes or noodles.
  • Step 5: Make the Buttery Crouton Topping - Melt the butter and toss it with the lightly crushed garlic croutons until the pieces are coated. Sprinkle the crouton mixture over the chicken and around the baking dish. I like leaving the croutons a little chunky because those larger pieces get crisp around the edges while soaking up just enough sauce underneath.
  • Step 6: Cover and Bake the Chicken - Cover the baking dish tightly with foil and bake for 30 minutes. At that point, check the chicken with an instant read thermometer in the thickest section. If the chicken still needs more time, continue baking until it is nearly cooked through. Larger chicken breasts may need another 10 to 15 minutes. You want the chicken to reach a safe internal temperature of 165°F by the time the dish is finished.
  • Step 7: Add the Provolone Cheese - Remove the foil and place two slices of provolone over each chicken breast. Try to position the cheese so it covers most of the chicken while still letting some of those buttery croutons peek through. Return the dish to the oven briefly if needed so the chicken can finish cooking before you switch to the broiler.
  • Step 8: Broil Until Golden - Turn on the broiler and watch the dish closely while the cheese melts and begins to brown. This usually takes only a minute or two, and I stay right by the oven because melted cheese can go from beautifully spotted to overly dark very quickly. You are looking for bubbling provolone with a few golden areas and crisp edges on the croutons.
  • Step 9: Finish With Crispy Onions - Take the baking dish out of the oven and sprinkle the crispy fried onions over the top. Adding them now instead of early in the baking process keeps them light and crunchy. That crisp onion topping is one of my favorite parts because it gives every serving a little extra texture.
  • Step 10: Add Parsley and Serve - Finish the French Onion Chicken Bake with chopped fresh parsley and let the chicken rest for about 5 minutes before serving. That short rest gives the juices inside the chicken a chance to settle and lets the sauce thicken slightly. Spoon plenty of sauce from the bottom of the pan over each serving because nobody at my table wants to leave that part behind.

Notes

Substitutions

  • Chicken thighs: Boneless, skinless chicken thighs can replace the chicken breasts and are a good choice if your family prefers darker meat.
  • Swiss cheese: Use Swiss in place of provolone for a sharper cheese flavor that leans even closer to classic French onion soup.
  • Gruyère cheese: Gruyère gives the bake a rich, nutty finish and melts beautifully over the chicken.
  • Homemade onion dip substitute: Mix sour cream with dry onion soup mix when French onion dip is not available.
  • Seasoned croutons: Regular seasoned croutons work well in place of garlic croutons, especially if you want the garlic flavor to be a little milder.

Variations

  • Mushroom French Onion Chicken Bake: Add 8 ounces of sliced baby bella mushrooms to the soup mixture before placing the chicken in the baking dish.
  • Bacon French Onion Chicken Bake: Add 6 slices of cooked, crumbled bacon over the melted cheese before finishing the dish with crispy fried onions.
  • Three Cheese French Onion Chicken Bake: Use provolone, Swiss, and mozzarella together for a gooier cheese layer with a little extra richness.
  • French Onion Chicken and Potato Bake: Arrange thin slices of Yukon Gold potatoes in the baking dish so they cook underneath the chicken and soak up the onion sauce.
  • French Onion Turkey Bake: Use cooked turkey cutlets in place of chicken for a comforting way to give leftover holiday turkey a completely different personality.

Tips and Tricks

  • Choose thicker provolone: Thick slices give you a more generous melted layer and hold up nicely under the broiler.
  • Watch the thickness of your chicken: Chicken breasts vary quite a bit in size, so use temperature rather than the clock alone to decide when they are done.
  • Butter the croutons well: Tossing the croutons with melted butter helps them brown and gives the topping a richer texture.
  • Keep some croutons chunky: A mix of smaller crumbs and larger pieces makes the topping much more interesting than finely crushed crumbs alone.
  • Broil carefully: Stay close to the oven because the cheese and croutons can brown quickly under direct heat.
  • Save every spoonful of sauce: Serve the chicken over something that can catch the creamy onion sauce instead of leaving it behind in the baking dish.

Serving Ideas

  • Creamy mashed potatoes: Spoon the chicken and plenty of French onion sauce over mashed potatoes for the kind of dinner that usually gets everybody quiet for the first few bites.
  • Buttered egg noodles: Wide egg noodles catch the sauce beautifully and make this feel like an especially cozy bowl and fork meal.
  • Steamed rice: White or brown rice is a simple choice when you want something mild that lets the onion sauce stand out.
  • Roasted green beans: Green beans add freshness and a little snap next to all the creamy, cheesy richness.
  • Simple green salad: A crisp salad with a bright vinaigrette helps balance the heavier flavors in the chicken.
  • Warm dinner rolls: Put a basket of rolls on the table and let everybody use them to swipe up the sauce left on the plate.

Storage and Make Ahead Tips

  • Refrigerate leftovers promptly: Store leftover chicken and sauce in an airtight container in the refrigerator for up to 4 days.
  • Reheat gently in the oven: Cover the chicken and warm it in a 325°F oven until heated through so the meat has less chance of drying out.
  • Use the microwave for individual portions: Reheat one serving at a time in short intervals, spooning some sauce over the chicken before heating.
  • Keep extra croutons separate: If you know you will have leftovers, save a handful of dry croutons and add them after reheating so you get fresh crunch.
  • Freeze without crunchy toppings: Freeze the chicken and sauce without croutons or crispy fried onions for up to 3 months.
  • Thaw overnight: Move frozen portions to the refrigerator the night before you plan to serve them, then reheat and finish with fresh buttered croutons and crispy onions.
  • Prep earlier in the day: Assemble the sauce, chicken, seasonings, and onion dip in the baking dish, then refrigerate until dinner time and add the topping just before baking.
