Ingredients

  • 1 to 1 ½ pounds boneless skinless chicken breasts (cut into bite sized chunks)
  • 3 medium potatoes (cut into 1 inch pieces)
  • 1 cup broccoli florets
  • 1 red bell pepper (cut into 2 to 3 inch pieces)
  • 1 yellow bell pepper (cut into 2 to 3 inch pieces)
  • ¼ cup Parmesan cheese
  • 3 tablespoons breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon black pepper
  • ½ teaspoon salt
  • ¾ cup shredded mozzarella cheese
  • fresh parsley (optional, for garnish)

Instructions

  • Step 1: Heat the Oven - Preheat your oven to 375°F. Giving the oven enough time to heat properly matters because you want the chicken and potatoes to begin cooking as soon as the pan goes inside. If the oven is still slowly warming up, the vegetables can start releasing moisture before they begin roasting, and you lose some of those tasty browned edges.
  • Step 2: Prep the Chicken and Vegetables - Cut the chicken into bite sized chunks, then cut the potatoes into roughly 1 inch pieces.   • Step 3: Mix the Parmesan Coating - In a small bowl, combine the Parmesan cheese, breadcrumbs, olive oil, garlic powder, onion powder, Italian seasoning, black pepper, and salt. Chicken is safely cooked when the thickest pieces reach 165°F in the center. If your chicken pieces are especially small, check them a little sooner so they stay juicy.
  • Step 7: Add the Mozzarella - Sprinkle the shredded mozzarella evenly across the pan. Return everything to the oven for about 5 more minutes, just until the cheese has melted.
