Ingredients

  • 12 oz Italian sausage links cut into 1 inch slices
  • 16 oz gnocchi
  • 1 red bell pepper cut into 1 inch pieces
  • 1 green bell pepper cut into 1 inch pieces
  • 1 tbsp minced garlic
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes
  • 3 tbsp olive oil
  • ¼ cup shredded Parmesan
  • 2 tbsp fresh chopped parsley

Instructions

  • Step 1: Heat the Oven and Prep the Ingredients - Preheat your oven to 425°F. While it warms up, cut the Italian sausage and both bell peppers into pieces about 1 inch in size. Keeping everything fairly similar in size helps it cook at the same pace, which is especially important with a sheet pan dinner. You do not need ruler perfect pieces here. I usually aim for bite sized chunks that will be easy to scoop up with a piece of gnocchi when dinner hits the plate.
  • Step 2: Arrange Everything on the Sheet Pan - Add the sliced sausage, gnocchi, red bell pepper, green bell pepper, and minced garlic to a medium sheet pan. Spread everything out as evenly as you can. You want the ingredients touching the hot pan rather than piled into a mound in the center. A little breathing room gives the sausage and gnocchi a better chance to brown instead of simply steaming. If your pan looks extremely crowded, using a slightly larger sheet pan is a good idea.
  • Step 3: Season and Toss the Pan - Sprinkle the salt, black pepper, and red pepper flakes evenly over the sausage, gnocchi, and vegetables.
