Ingredients

  • 2 pounds beef stew meat or chuck roast cut into chunks
  • 1 small onion sliced
  • 2 cups sliced mushrooms
  • 2 cloves garlic minced
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 8 ounce cream cheese softened and cubed
  • 1 cup sour cream
  • 12 ounce wide egg noodles cooked and drained
  • Fresh parsley chopped (optional, for serving)

Instructions

  • Step 1: Add the base ingredients - Place the beef, sliced onion, mushrooms, and minced garlic into the slow cooker. This is where everything starts building flavor right from the beginning.
  • Step 2: Add the sauce ingredients - Pour in the cream of mushroom soup and beef broth. Add the Worcestershire sauce, Dijon mustard, paprika, salt, and black pepper. Give everything a good stir so the beef is well coated.
  • Step 3: Slow cook until tender - Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours. You’ll know it’s ready when the beef is fork tender and smells incredible.
  • Step 4: Make it creamy - About 20 minutes before serving, stir in the softened cream cheese and sour cream. Stir gently until the sauce becomes smooth and creamy.
  • Step 5: Add the noodles - Add the cooked egg noodles to the slow cooker and stir until they’re fully coated in the sauce.
  • Step 6: Serve and enjoy - Spoon into bowls, sprinkle with fresh parsley if you like, and serve warm to very happy people.

Notes

Cook Time: 4-8 hours

Substitutions

  • Ground beef: Brown it first, drain well, then add to the slow cooker for a quicker option.
  • Greek yogurt: Swap for some or all of the sour cream for a lighter finish.
  • Cream of onion soup: A good alternative if mushrooms are not a favorite.

Variations

  • Extra vegetables: Add sliced bell peppers or peas for color and texture.
  • More garlic: Add an extra clove or two if your family loves garlic.
  • Different base: Serve over mashed potatoes or rice instead of noodles.

Tips and Tricks

  • Choose chuck roast: It breaks down beautifully during long cooking.
  • Soften the cream cheese: This helps it melt smoothly into the sauce.
  • Cook noodles fresh: Adding freshly cooked noodles keeps them tender, not gummy.
  • Taste before serving: Adjust salt and pepper at the end if needed.

Serving Ideas

  • Simple salad: A crisp green salad balances the richness.
  • Crusty bread: Perfect for soaking up extra sauce.
  • Steamed vegetables: Broccoli or green beans pair well.
  • Buttered peas: A classic and easy side.

Storage and Make Ahead Tips

  • Refrigerator storage: Store leftovers in an airtight container for up to 4 days.
  • Reheating: Warm gently on the stove or microwave, adding a splash of broth or milk if needed.
  • Freezing tip: Freeze the cooked beef and gravy before adding cream cheese, sour cream, and noodles for best results.
