Slow Cooker Catalina Chicken

Slow Cooker Catalina Chicken is an easy family dinner made with tender chicken breasts cooked in a sweet and tangy sauce of Catalina dressing, apricot preserves, onion soup mix, Worcestershire sauce, and garlic. A quick cornstarch finish turns the sauce thick and glossy, making it especially good served over rice, mashed potatoes, or noodles.

Total Time:5 hours 10 minutes

Ingredients

  • 4 boneless, skinless chicken breasts (about 1 1/2 to 2 pounds)
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 cup Catalina dressing
  • 1 cup apricot preserves
  • 1 oz packet dry onion soup mix
  • 1 tbsp Worcestershire sauce
  • 2 cloves garlic (minced)
  • 1 tbsp cornstarch
  • 1 tbsp cold water
  • chopped fresh parsley (optional, for garnish)

Instructions

  • Step 1: Arrange the Chicken - Place the chicken breasts in the bottom of a 5 quart or 6 quart slow cooker. Try to keep them in a fairly even layer so they cook at a similar pace. If your chicken breasts vary dramatically in size, place the thicker pieces toward the outside where the slow cooker tends to run a little hotter. Starting with an even layer makes the finished texture much more predictable.
  • Step 2: Season the Chicken - Sprinkle the salt, black pepper, and garlic powder evenly over the chicken breasts. I like seasoning the chicken before adding the sauce because it gives the meat itself a good foundation of flavor instead of asking the sauce to do all the work. You do not need to rub or massage anything in. Just give each piece an even coating.
  • Step 3: Mix the Catalina Sauce - In a medium bowl, whisk the Catalina dressing and apricot preserves together until they are well combined. The mixture may look a little thick at first, but keep whisking and it will smooth out. Add the dry onion soup mix, Worcestershire sauce, and minced garlic, then stir again until everything is evenly distributed throughout the sauce.
  • Step 4: Coat the Chicken - Pour the Catalina mixture evenly over the seasoned chicken. Use a spoon or tongs to move the chicken slightly so the sauce works its way around each piece. You want the tops generously coated, but do not worry about getting every inch submerged. As the chicken cooks, it will release some juices and create plenty of liquid.
  • Step 5: Slow Cook Until Tender - Cover the slow cooker and cook the chicken on LOW for 4 to 5 hours or on HIGH for 2 1/2 to 3 hours. The exact timing will depend on the size and thickness of your chicken breasts, so start checking on the early side if your pieces are smaller. The chicken is ready when it reaches an internal temperature of 165 degrees F and is tender when cut.
  • Step 6: Remove and Rest the Chicken - Carefully transfer the cooked chicken breasts to a serving plate and cover them loosely with foil. Be gentle here because well cooked chicken can be quite tender. Resting the chicken separately for a few minutes also gives you space to thicken the sauce without accidentally breaking the breasts apart while you stir.
  • Step 7: Make the Cornstarch Mixture - In a small bowl, whisk together the cornstarch and cold water until completely smooth. Do not add dry cornstarch directly to the hot sauce because it can form stubborn little lumps. Mixing it with cold water first gives you a smooth slurry that blends quickly into the cooking liquid.
  • Step 8: Thicken the Catalina Sauce - Stir the cornstarch mixture into the sauce left in the slow cooker. Cover and cook on HIGH for 10 to 15 minutes. Give it a stir if needed and watch for the sauce to become glossy and thick enough to coat the back of a spoon. This short finishing step makes a surprisingly big difference in how the final dish eats.
  • Step 9: Return the Chicken and Serve - Place the chicken back into the slow cooker and spoon plenty of thickened Catalina sauce over every piece. Garnish with chopped fresh parsley if you are using it. Serve the chicken warm with extra sauce over rice, mashed potatoes, noodles, or whatever sounds good to your family that night.

Notes

Substitutions

  • Chicken thighs: Boneless, skinless chicken thighs can replace chicken breasts and are especially forgiving because they stay juicy during longer cooking.
  • Peach preserves: Use peach preserves instead of apricot preserves for a similar sweetness with a slightly different fruit flavor.
  • Russian dressing: Russian dressing can stand in for Catalina dressing, although the finished sauce will have a slightly different balance of sweetness and tang.
  • Low sodium onion soup mix: This is a helpful swap when you want a little more control over the salt level.
  • Chicken tenderloins: Tenderloins work well, but because they are smaller, begin checking them considerably earlier so they do not overcook.

Variations

  • Spicy Catalina Chicken: Add 1/2 teaspoon crushed red pepper flakes or 1 to 2 teaspoons hot sauce to the Catalina mixture for gentle heat alongside the sweetness.
  • Peach Catalina Chicken: Replace the apricot preserves with peach preserves for a bright, summery variation that still keeps the same easy cooking method.
  • Pineapple Catalina Chicken: Add 1 cup drained pineapple chunks during the final 30 minutes of cooking for little bites of sweet pineapple throughout the sauce.
  • Catalina Chicken and Peppers: Add sliced red and yellow bell peppers during the final hour so they soften while still keeping a little texture.
  • Catalina Chicken Bowls: Slice the finished chicken and serve it over rice with steamed broccoli, green onions, and a generous spoonful of extra sauce.

Tips and Tricks

  • Keep the apricot preserves: They balance the tangy dressing and savory onion soup mix and help create the thick, glossy character of the sauce.
  • Choose preserves instead of jelly: Preserves give the sauce a slightly richer texture and fuller fruit flavor.
  • Watch the chicken temperature: Chicken breasts are lean, so removing them once they reach 165 degrees F helps keep them juicy.
  • Adjust for breast size: Very large or thick chicken breasts may need a little extra time, while smaller pieces can finish sooner.
  • Do not skip the cornstarch step: Thickening the sauce at the end is what turns the cooking liquid into the shiny glaze that clings to the chicken.
  • Taste before adding more salt: Catalina dressing, onion soup mix, and Worcestershire sauce all contain salt, so the finished sauce may already be seasoned enough.
  • Save plenty of sauce for serving: The sauce is one of my favorite parts of this dinner, especially when there is rice or mashed potatoes underneath to catch every spoonful.

Serving Ideas

  • Fluffy white rice: Rice is probably my first choice because it absorbs the sweet and savory Catalina sauce beautifully.
  • Creamy mashed potatoes: Spoon a little extra sauce over the potatoes and you have serious comfort food with almost no extra effort.
  • Buttered egg noodles: Tender noodles give you another easy way to make sure none of the sauce gets left behind.
  • Roasted potatoes: Crispy roasted potatoes are a nice contrast to the tender chicken and glossy sauce.
  • Steamed broccoli: Broccoli adds color and freshness, and the little florets are surprisingly good at catching extra sauce.
  • Green beans: Simple seasoned green beans keep the plate balanced and work especially well for a weeknight family dinner.
  • Dinner rolls: Put warm rolls on the table and somebody will use the last one to wipe up whatever sauce is left on the plate. In my house, that is usually a pretty good sign dinner went over well.

Storage and Make Ahead Tips

  • Refrigerate leftovers with the sauce: Store the chicken and Catalina sauce together in an airtight container in the refrigerator for up to 4 days so the meat stays moist.
  • Reheat gently: Warm leftovers in the microwave or in a covered skillet over medium low heat until heated through.
  • Loosen thick sauce as needed: If the refrigerated sauce becomes thicker than you would like, stir in 1 or 2 tablespoons of water or chicken broth while reheating.
  • Freeze for later: Cool the chicken and sauce completely, then freeze them together in a freezer safe container for up to 3 months.
  • Thaw overnight: Move frozen Catalina chicken to the refrigerator the night before you plan to serve it so it can thaw gradually before reheating.
  • Prepare the sauce ahead: You can whisk the Catalina dressing, apricot preserves, onion soup mix, Worcestershire sauce, and garlic together the night before and refrigerate the mixture in a covered container. The next day, season the chicken, pour over the prepared sauce, and start the slow cooker.
