Total Time:4 hours 15 minutes

Ingredients

  • pounds boneless skinless chicken breasts, diced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • ½ cup low-sodium soy sauce
  • ¼ cup teriyaki sauce
  • 1 tablespoon sesame oil
  • ½ cup chicken broth
  • 1 cup diced onion
  • 2 cups frozen carrots and peas
  • 4 cups cooked and cooled white rice
  • 2 large eggs beaten
  • Scallions for garnish optional

Instructions

  • Step 1: Season the Chicken - Place the diced chicken directly into the slow cooker. Sprinkle the salt, black pepper, garlic powder, and ground ginger over the chicken. Give it a quick stir so the seasonings coat the pieces evenly.
  • Step 2: Add the Sauces - Pour the soy sauce, teriyaki sauce, sesame oil, and chicken broth over the seasoned chicken. These liquids will slowly cook the chicken while building the savory base of the dish.
  • Step 3: Add the Vegetables - Stir in the diced onion along with the frozen carrots and peas. Spread everything evenly so the vegetables cook alongside the chicken.
  • Step 4: Slow Cook - Cover the slow cooker with the lid and cook on low for about three to four hours. The chicken should be fully cooked and very tender by the end of this time.
  • Step 5: Scramble the Eggs - Push the chicken mixture slightly to one side of the slow cooker. Pour the beaten eggs directly onto the hot surface and stir quickly to scramble them until they are set.
  • Step 6: Add the Rice - Add the cooked and cooled white rice to the slow cooker. Stir gently to combine everything evenly while keeping the rice grains fluffy.
  • Step 7: Finish and Serve - Let the rice warm through for a few minutes. Taste and adjust seasoning if needed. Sprinkle sliced scallions over the top before serving.

Notes

Substitutions

  • Chicken thighs: These can replace chicken breasts for a richer flavor and slightly juicier texture.
  • Brown rice: Fully cooked brown rice can be used if you prefer a heartier grain.
  • Coconut aminos: This makes a great soy sauce alternative for a slightly sweeter and less salty flavor.
  • Fresh vegetables: Chopped fresh carrots and peas can replace frozen vegetables if you have them on hand.
  • Rotisserie chicken: Shredded rotisserie chicken can be stirred in during the last thirty minutes instead of cooking raw chicken.

Variations

  • Ham fried rice: Add diced ham along with the vegetables for a classic combination.
  • Sweet pineapple version: Stir in pineapple chunks for a sweet and savory contrast.
  • Spicy fried rice: Add a spoonful of sriracha or chili paste for a little heat.
  • Shrimp addition: Add peeled shrimp during the final twenty minutes of cooking.
  • Extra teriyaki glaze: Drizzle additional teriyaki sauce on top just before serving.

Tips and Tricks

  • Use cold rice: Day old chilled rice works best because it stays separate instead of clumping.
  • Add rice at the end: Cooking rice too long in the slow cooker can make it soft and mushy.
  • Dice chicken evenly: Uniform pieces help everything cook at the same pace.
  • Stir gently: Gentle mixing keeps the rice grains fluffy.
  • Adjust moisture if needed: If the mixture seems a little dry add a small splash of chicken broth before serving.

Serving Ideas

  • Simple dinner bowls: Serve generous portions in bowls with extra scallions and a drizzle of soy sauce.
  • Side dish spread: Pair it with egg rolls, dumplings, or steamed vegetables.
  • Lunch meal prep: Divide into containers for quick grab and go lunches.
  • Family style dinner: Place the slow cooker right on the table and let everyone serve themselves.

Storage and Make Ahead Tips

  • Refrigerator storage: Store leftovers in an airtight container for up to four days.
  • Freezer storage: Freeze portions for up to two months for easy future meals.
  • Reheating tip: Warm in a skillet or microwave with a splash of broth to restore moisture.
  • Meal prep friendly: Make the recipe ahead of time and portion it into containers for the week.
