Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts (cut into bite sized pieces)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon dried thyme
  • 1 medium yellow onion (thinly sliced)
  • 12 ounces frozen mixed vegetables
  • 2 cloves garlic (minced)
  • 1 10.5 ounce can condensed French onion soup
  • 1 10.5 ounce can condensed cream of chicken soup
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 1 16.3 ounce can refrigerated biscuits
  • 6 slices provolone cheese
  • 2 tablespoons fresh parsley (chopped)

Instructions

  • Step 1: Add and Season the Chicken - Put the bite sized raw chicken pieces into a 6 quart slow cooker. Sprinkle them evenly with the salt, black pepper, garlic powder, and dried thyme. I like seasoning the chicken before adding anything creamy because it gives those individual pieces a better chance to pick up flavor instead of relying on the sauce to do all the work later.
  • Step 2: Add the Onion, Vegetables, and Garlic - Scatter the thinly sliced yellow onion over the chicken, then add the frozen mixed vegetables and minced garlic. You do not need to thaw the vegetables first. Keep this part simple. The slow cooker is going to give the onion plenty of time to soften and the frozen vegetables will cook right along with everything else.
  • Step 3: Spoon in the Soups - Add the condensed French onion soup and condensed cream of chicken soup over the chicken and vegetables. Spoon them around so they are fairly evenly distributed. These two soups become the base of the gravy, with the French onion soup bringing that deep savory note and the cream of chicken giving you the rich texture you expect from pot pie.
  • Step 4: Add Worcestershire and Stir - Pour in the Worcestershire sauce, then gently stir everything together. You want the chicken and vegetables coated with the soup mixture without smashing the vegetables or making a mess around the sides of the cooker. Once everything looks evenly combined, smooth the mixture into a fairly even layer.
  • Step 5: Slow Cook Until Tender - Cover the slow cooker and cook on LOW for 3 1/2 to 4 1/2 hours or on HIGH for 2 to 3 hours. The chicken should be cooked through and the vegetables should be tender when you move on. Slow cookers can run a little differently, so use doneness rather than the clock alone as your guide.
  • Step 6: Thicken the Filling - In a small bowl, whisk the cornstarch and cold water together until completely smooth. Stir this mixture into the hot chicken filling, cover the slow cooker, and cook on HIGH for another 10 to 15 minutes. This step matters because you want the filling creamy and thick rather than soupy before the biscuits go on top.
  • Step 7: Arrange the Biscuits - Place the refrigerated biscuits in a single layer over the hot filling. Leave a little space between them so steam has room to move around each biscuit. That circulation helps the dough cook more evenly, especially toward the centers where slow cooker biscuits can take a little longer.
  • Step 8: Cook the Biscuits Through - Cover the slow cooker and continue cooking on HIGH for 45 to 60 minutes, or until the biscuits are cooked through in the centers. Try not to lift the lid during the first 40 minutes because every peek lets out heat and steam. Before serving, gently check one of the thickest biscuits in the center to make sure there is no raw dough inside.
  • Step 9: Melt the Provolone - Arrange the provolone slices over the cooked biscuits, cover the slow cooker again, and let everything sit for about 5 minutes. The heat trapped inside should melt the cheese into a soft, gooey layer. This is the moment when the whole dinner starts looking especially good.
  • Step 10: Finish With Parsley and Serve - Sprinkle the chopped fresh parsley over the melted provolone and serve while everything is hot. Scoop deep enough to get some of the creamy chicken filling along with a cheesy biscuit. Around our table, those first few scoops tend to be the quiet ones because everybody is too busy eating.

Substitutions

  • Chicken thighs: Boneless, skinless chicken thighs can replace the chicken breasts and will give you especially tender, juicy pieces.
