Slow Cooker French Onion Pot Roast

Ingredients

  • 2 onions sliced
  • 3 pound chuck roast
  • 1 pound baby potatoes halved
  • 3 large carrots sliced
  • 10.5 ounce can french onion soup
  • 1 envelope beefy onion soup mix
  • 2 cloves garlic minced
  • 1 cup water
  • Parsley for garnish

Instructions

  • To your slow cooker add your sliced onions, potatoes and carrots and place the chuck roast on top.
  • Whisk together the french onion soup, beefy onion soup mix, garlic and water.
  • Pour over the chuck roast.
  • Cover and cook on low 8 hours or high 6 hours until the meat falls apart.
  • Garnish and serve!

Notes

  • Store leftovers in an airtight container in refrigerator for up to 3 days.
  • You can top this with a little swiss cheese if you like.
  • This is amazing on top of mashed potatoes but also makes a great sub.
  • Make a little cornstarch slurry and thicken up the gravy if you like.
