Step 1: Season the Steak - Start by patting the steak tips dry with paper towels. This helps them brown better later on. Sprinkle the salt, pepper, and garlic powder evenly over the meat and toss everything together so every piece gets coated. It does not need to be fancy. Just make sure the seasoning gets onto all the meat because that first layer of flavor matters.
Step 2: Sear the Steak for Extra Flavor - Heat the olive oil in a large skillet over medium high heat. Once the pan is hot, add the steak tips in batches so they brown instead of steam. Let them cook for about two to three minutes per side until you get a nice golden crust. This step adds a ton of flavor to the final dish. The browned bits left behind in the pan are pure magic for flavor. If you are short on time, you can skip this step, but if you have a few extra minutes it is absolutely worth it.
Step 3: Add Everything to the Slow Cooker - Transfer the browned steak tips into the slow cooker. Pour in the sweet chili sauce, pineapple chunks, reserved pineapple juice, soy sauce, brown sugar, and minced garlic. Stir everything together until the steak is fully coated in that sweet sticky sauce. At this point it already smells incredible.
Step 4: Add the Bell Peppers - Scatter the chopped red bell peppers over the top. I like cutting them into larger chunks so they hold their shape during the long cooking time. Smaller pieces tend to soften too much. The peppers bring freshness to the rich sauce and add beautiful color once everything is finished cooking.
Step 5: Slow Cook Until Tender - Place the lid on the slow cooker and cook on low for six to eight hours or high for four to five hours. The steak should become fork tender and soak up all that sweet savory flavor. One of my favorite parts of this recipe is how the sauce thickens naturally as it cooks. The pineapple juice and brown sugar help create that glossy finish that clings perfectly to the steak.
Step 6: Stir and Serve - Right before serving, give everything a good stir so the peppers and sauce mix evenly throughout the slow cooker. Spoon the steak tips and sauce over hot rice, mashed potatoes, or even noodles. Finish with chopped parsley and scallions for a little freshness right at the end. That pop of green makes the whole dish look even more inviting.
