Ingredients

  • 1 pound ground beef
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 2 packs ramen noodles seasoning packets discarded
  • 1 cup shredded cheddar cheese
  • Top with scallions tomatoes, sour cream or your favorite taco toppings

Instructions

  • Step 1: Brown the beef - Place a large skillet over medium heat and add the ground beef. Break it apart with a spoon as it cooks. Season with salt and black pepper. Cook until the beef is fully browned and no pink remains. If there is excess grease, carefully drain it off.
  • Step 2: Add the taco seasoning - Sprinkle the taco seasoning over the cooked beef. Stir well so every bit of meat is coated. This is where the dish really starts to come alive with flavor.
  • Step 3: Pour in the broth - Add the beef broth to the skillet. Stir and gently scrape the bottom of the pan to lift any browned bits. Those little bits add extra flavor to the dish.
  • Step 4: Add the ramen noodles - Break the ramen noodles into large pieces and place them directly into the skillet. Press them down slightly so they are mostly covered by the liquid.
  • Step 5: Cook the noodles - Let everything simmer for about 5 to 7 minutes. Stir occasionally to prevent sticking. The noodles will soften and soak up most of the broth.
  • Step 6: Stir in the cheese - Reduce the heat to low and add the shredded cheddar cheese. Stir until it melts completely and blends into the sauce, creating a rich and creamy texture.
  • Step 7: Let it rest - Remove the skillet from heat and let it sit for a few minutes. This helps the sauce thicken naturally and gives everything time to settle.

Notes

Substitutions

  • Ground turkey option: Swap ground beef for ground turkey if you want a lighter version that still tastes great.
  • Different cheese choice: Use pepper jack cheese instead of cheddar for a little extra kick.
  • Broth swap: Chicken broth works just as well if that is what you have on hand.

Variations

  • Add Rotel tomatoes: Stir in a can for extra flavor and a slight kick of heat.
  • Make it creamy: Add a spoonful of sour cream at the end for a richer texture.
  • Crunchy topping: Sprinkle crushed tortilla chips on top for a fun and satisfying crunch.

Tips and Tricks

  • Break noodles into larger pieces: This keeps them from becoming too soft during cooking.
  • Stir occasionally: Helps prevent noodles from sticking to the bottom of the skillet.
  • Let it rest before serving: Gives the sauce time to thicken and improves the overall texture.
  • Taste before serving: Adjust seasoning if needed since taco packets can vary in saltiness.
  • Do not overcook noodles: Keep an eye on them so they stay tender and not mushy.

Serving Ideas

  • Fresh toppings: Add scallions, diced tomatoes, or sour cream for brightness and balance.
  • Side salad: A simple green salad pairs nicely to lighten up the meal.
  • Warm tortillas: Serve with tortillas on the side for a fun taco inspired twist.
  • Hot sauce drizzle: Let everyone add their own level of heat at the table.

Storage and Make Ahead Tips

  • Refrigerate leftovers: Store in an airtight container in the fridge for up to 3 days.
  • Reheat gently: Warm on the stove or in the microwave with a splash of broth to loosen the sauce.
  • Make ahead option: Cook the beef mixture in advance and add noodles when ready to serve for best texture.
